Cookies are delicious and crunchy baked goods. They usually have a round shape and consist of rice, corn, spelt or other puffed cereals. They are good as snacks or as an accompaniment to delicate but tasty first or second courses.

What are Cookies?

Cookies are food baked goods characterized by a circular and thin shape, with an extremely low weight. They are produced from a mixture of puffed cereals and food glue, molded and then dried, although it depends on the type of preparation since each oven follows its own process.

The best known and most widespread cookie is the rice cake, called puffed rice cake in English.
The classic rice cracker is round, with a diameter of about 12 centimeters. Some manufacturers make tiny ones, suitable as snacks.
In the most common format, a cookie weighs about 10g, contains 8g of carbohydrates and provides about 30-40kcal of energy.

Preparing the Cookies

The method by which most cookies are produced is particular because it must be able to transform cereals into a swollen compound. The machine used is the extruder that, through a very high pressure, cooks the product creating biscuits; these, in contact with the air, swell and give rise to the food we know.
This same process is also used for other products, just think of cereal-based confectionery or corn flakes.

How do you eat cookies?

Extremely popular in North America and other Western countries, crackers are eaten as a substitute for bread, both for main meals and for secondary meals.
Cookies are a good alternative to rusks, crackers or other bagged snacks. They are often used to make sandwiches and are generally considered a “healthy” food; in fact, they are widely used in children's diets and in slimming diets, as they are considered less energetic than any other cereal derivative. In reality, considering them to be more dietary than other baked goods is erroneous and everything depends on the quantities and ways in which they are consumed.

An alternative and delicious way to consume them could be to use them instead of bread for tomato bruschetta or as canapes, accompanied by an aperitif.
Beyond that, nothing prevents the consumption of cookies as a dessert, with the addition of jam, hazelnut cream and more!

In addition, cookies, both rice and corn, do not contain gluten and are therefore perfect to be consumed by all people with celiac disease or hypersensitive

to gluten.
