DIFFERENCE BETWEEN DISTILLATES, GRAPPA AND LIQUORS

The distillate, also called brandy, is an alcoholic product derived from the distillation of a fermented sugary liquid, generally obtained with raw materials of vegetable origin such as, for example, cereals, roots or tubers, wine or fruits. Some of the best known examples are certainly Rhum, Gin, Vodka, Tequila, Brandy and Whiskey. Grappa, on the other hand, is a particular type of brandy produced only in Italy using pomace obtained from grapes cultivated and vinified exclusively on the national territory; pomace distillates produced in other European countries cannot in fact be called grappa, but take on other typical names. The liqueur, on the other hand, is a solution composed of alcohol, sugar and water, prepared hot or cold, flavored with plant extracts such as, for example, nocino, myrtle, sambuca or limoncello.

Grappa is therefore produced using the pomace obtained from the racking of red wines, in this case already fermented, then ready to be distilled; however, two other types of pomace are used, namely the semi-virgin ones, obtained from the vinification of rosé wines or sweet wines or the virgin ones, obtained from the vinification of white wines, which, however, must both be fermented before starting the actual distillation. Therefore, grappa, distilled from fermented pomace, should not be confused with grape brandy, distilled with grape must, or with wine distillate such as, for example, Brandy or Cognac.

By law, the alcohol content of grappa must be not less than 37.5% by volume, while no maximum limit is set. Grappas can be classified according to the degree of processing they undergo during distillation and therefore you can identify Young, Aromatic grappa when they derive from aromatic grapes such as Moscato or Traminer grappa, Aged when they mature in wood for at least 12 months and finally Riserva aged or Stravecchia when they mature in wood for at least 18 months.

Then there is barricaded grappa, which is characterized by the particular aging process that takes place inside barrels called barrels, consisting of a type of compact wood, with very fine porosity and good elasticity, characteristics that are frequently found in the trunks of trees that have lived for a long time, generally more than a century. Finally, grappa should always be served at room temperature to best enhance their aromas and flavor; each grappa and each distillate would also have the right glass to be enjoyed at its best.
