Calabria, a region waiting to be discovered, unfortunately full of afflictions and continuous usurpations of dignity and justice. And yet we must not think about stereotypes like too many times we abandon ourselves to doing. In Calabria in recent years, a light has begun to be seen, still dim but there is: there are young people who are courageously walking on their own legs trying to enhance their territory and their identity.

Calabria is a land that has never received as much as it has given. But there are women and men who do not give up and, on the contrary, redouble their efforts. New experiences are starting to manage land seized from the mafias with bergamot plants and vineyards, where licorice represents the redemption of a people who want to shout to the world the beauty of their land. The world is full of Calabrians and it's not a mocking phrase: it's the truth! There are very important communities in Germany, the United States and South America. They are a people of migrants who would like to turn history upside down and relive the Italian dream.

Calabria is the land of Magna Graecia rich in history. It laps Sicily in a small space in the Strait where it is said that great one-eyed men remained watching and one of these, Polyphemus, met Ulysses there. Calabria has a mountainous and hilly territory that ends in the north with the Pollino Massif with peaks that reach even more than 2200 meters, such as Monte Pollino. In the north center of the region is the Sila Plateau where black pigs graze and offer high quality cold cuts. Further south, on the other hand, Aspromonte, with its impenetrable forests and small clearings for pastures for pigs and sheep.

Calabria in Roman times was called Bruttium by the Bruti population that inhabited it. It was also called Italy after the people of the Italians, descendants of the Enotri. It was a land rich in pastures and glades for bulls in ancient times and in fact there are many names that still trace that specificity today such as Bovalino, Bova, Taurianova, Gioia Tauro, etc. The name Calabria derives from the name of a people, the Galabrioi, who came from the Balkan Peninsula. Greeks and Romans have left indelible traces in history and the discovery of the two Riace Bronzes represents the culmination of those civilizations that found a worthy and fruitful home here.

Calabria is still shrouded in an aura of sacral and silent ancient history. There are places where time has stopped, areas where nature has never been harassed and has prevailed over man and his progress. Calabria does not know half measures and we can experience this even at the table

.

TYPICAL CALABRIAN PRODUCTS

Think of his best-known typical product, chilli pepper, a product that determines the spiciness of all regional cuisine, difficult to offer for those who are not part of that tradition. In Calabria, new products are being rediscovered that still speak an ancient language. Bergamot, for example, is becoming a trendy and refined fruit, for its quality as a natural antioxidant like few others and for its pleasantness.

Among the Calabrian cold cuts, DOP are represented by Capocollo di Calabria DOP, Pancetta di Calabria DOP, Sausage and Soppressata di Calabria DOP.

Another typical citrus fruit of Calabria are the Clementine IGP. The Rocca Imperiale DOP Lemon and the Calabrian Licorice are very interesting. It should be remembered the inclusion in European certification requests of Annona Cherimola, an exotic fruit that has been cultivated in the province of Reggio Calabria for more than 50 years. Also worth remembering are the Figi di Cosenza DOP and the various oils such as Alto Crotonese DOP, Lametia and Bruzio DOP. Excellent potatoes from Sila IGP and the very famous Red Onion from Tropea IGP.

Calabria is experiencing a small spring that is accompanied by many young people and by people who have decided to renounce the scourge of expatriation. We at Spaghetti & Mandolino are also expanding the product base of this very interesting region.
