The story of Domori begins with a dream, the dream of going straight to the soul of chocolate and reaching places no one has ever been. The Piedmontese company has succeeded: Domori is indeed the first company to exclusively process fine cocoa, that is, aromatic cocoa. The presence of man holds an importance equal to that of the raw material, and the careful and experienced hands of the Domori technicians can ensure that the aromatic diversities of cocoa are preserved and highlighted in the final products. 

In None, in the province of Turin, cocoa is transformed into Domori chocolate. The Turin factory has been designed and built to preserve the sensory identity of the different varieties of cocoa during the transformation into extra chocolate. Here, the bags of aromatic cocoa arrive. It is a low-impact heart on cocoa, because the Domori process is based on the use of low temperatures and few machines. 

 

 

Criollo: the rarest cocoa from Venezuela

 

 

However, the exotic heart of Domori is located in Paria, in Venezuela. Here lies the Hacienda San José, where more than 300 hectares of land are cultivated, of which 185 are grafted with cocoa. This land is a world heritage because it returns to us the taste of Criollo cocoa. It is the first and most important center in the world for recovering its biodiversity and for its cultivation. The Criollo is a variety of cocoa that has risked becoming lost: it is the cocoa of the Maya and Aztecs, whose cultivation has been progressively abandoned due to its low yield. It is a rare and fragile cocoa and represents only 0.001% of the cocoa produced in the world. Yet the quality of this cocoa is unmatched: being free of tannins, which impart acidity and astringency to the product, Criollo boasts a unique creaminess, roundness, and sweetness in the world.

The control of the entire supply chain is for Domori a non-negotiable value: all the cocoa used is selected thanks to the expertise developed within the company, whose role is to ensure that the raw material always meets sophisticated quality standards. For each type of cocoa purchased, Domori identifies a partner with whom to establish a mutual trust pact. Each type of chocolate is indeed made using cocoa sourced from specific plantations selected to align with Domori's quality standards.

BRC (British Retail Consortium) and IFS (International Food Standard): two fundamental international standards for quality and food safety certification. With the certification as an organic sector operator, Domori also aims to emphasize its commitment to the environment and the quality of production. Finally, Domori has set up a gluten-free requirement management system, which through risk analysis and monitoring of products and raw materials (production program, raw material assessment, sampling plans), ensures a product suitable for the celiac consumer.
