Dragees confetto has a very remote history that dates back to ancient Rome; the Romans used to serve a sort of bonbon consisting of flour, honey and almonds, very similar to the classic almond candy, to celebrate weddings and births.

Confetto was already present in eleventh century Venice and was particularly appreciated by noble families, who kept them in golden and richly decorated boxes to serve them at the most appropriate times.

Dragees confetti as we know them today were in fact born after the arrival of sugar in Europe, imported by the Arabs as early as 700 AD, thus becoming one of the predominant ingredients of Italian pastry; and it is in fact in Sulmona that confetti were born, whose artistic processing will take place at the Monastery of Santa Chiara

Confects are obtained through special bronze, copper or steel boilers. During processing, the boiler rotates continuously and covers the sprinkles with sugar or melted chocolate solutions. After drying, the dragee dragees are then polished and smoothed and then packaged
