Mustard is a preparation used to season and flavor dishes that is obtained with fruit, vegetables, mustard powder or mustard essence. The ingredients and recipes for preparing mustard vary according to seasons, regions and cities. Always eaten as a side dish for boiled and roasted meat, it is also excellent with tasty and aged cheeses or cold cuts.

It comes in thin slices of candied fruit and vegetables immersed in a thick and sweet syrup flavored with a mustard aroma that gives it a spicy flavor.

In some preparations, the mustard takes on the creamy consistency of a jam, while in other recipes the pieces of fruit remain whole.

Sweet and Savory Mustards: the story

In 1288, the term “mustum ardens” appeared for the first time in a French text that alluded to a wine must made fiery by the spiciness of mustard flour. This mixture allowed for a longer preservation of the fruit, which, as we all know, is an easily perishable product. This is the reason why mustard was created: to extend the life of fruit. In Italy, the use of sweet and savory mustards spread only around the seventeenth century: it is precisely in this period that there are various testimonies of its consumption, especially in the North near the Christmas holidays among rural families. #39

The must left the throne to the rest of the fruit, especially the quince. French and Italian mustards are beginning to be diversified

The types of Italian Mustards

French 'moutardes' are sauces based on vinegar, salt and black mustard grains, while Italian mustards are usually prepared with fruit, sugar and mustard oil.

Vicenza mustard is made from quinces and is obtained by cooking the pulp with sugar at half the weight. Once the sauce has cooled, mustard oil is added. It can also be done by adding pears to apples.

Cremona mustard, on the other hand, is a mixture of candied fruits with syrup and a higher percentage of sugar, which reaches 60% of the weight, with l&' addition of mustard essential oil. Usually Cremonese mustard has inside it: cherries, pears, quinces, tangerines, figs, apricots, peaches.

Mantuan mustard contains sliced quinces and pears and is used throughout the Virgilian province to prepare, above all, the filling of pumpkin tortelli.

Voghera mustard is made with a mixture of candied fruit and syrup, and is a production that was already widespread among monks in the second part of the 14th century to preserve fruit. Certainly before 1397: the year in which Gian Galeazzo Visconti wrote a letter to the Podestà of Voghera to praise the goodness of that preparation

Sweet mustards have a flavor marked especially by the sweetness of the fruit they have inside them. Salty mustards, on the other hand, have a bittersweet taste due to the presence of vegetables and vegetables, such as red onions or pumpkin, which are widely used.
