Our partners produce kamut paste from organic crops, in order to keep the organoleptic properties of this product unchanged, without the use of pesticides and chemical fertilizers.

based on this wheat.

WHAT IS KAMUT?

Kamut identifies the registered American brand of Khorasan wheat of the homonymous American company, which markets it exclusively but, as is often the case in these cases, the brand has become a common name. The name Kamut comes from the ancient Egyptian language 'Ka'Moet', meaning 'spirit of the earth'

It is a type of tetraploid wheat, botanically defined as Triticum Turgidum. Khorasan is a natural variety of durum wheat and which, due to its poor adaptability and resistance to fungi and parasites, requires sophisticated and artisanal processing. In fact, high quality standards of cultivation are required, compliance with strict protocols for grinding and processing beans, according to the traditional provisions of

organic agriculture.

The peculiarity of the Kamut plantations is certainly the high vertical extension, its stems can in fact reach 2 meters. The grains are larger than those of common wheat and are characterized by an elongated shape and an amber or brown color

DIFFERENCES BETWEEN KAMUT AND TYPE 0 WHEAT

What are the differences between these two wheat varieties and why is it better to prefer the Kamut one?

First of all, type 0 wheat, the most commonly used, derives from genetic selections created to facilitate mechanized soil cultivation and baking with yeasts. This increased refining of the product has lost sight of consumers' health, preferring yield and production to the detriment of nutritional properties. Type 0 flour is the one that undergoes the milling process several times, which means that the raw wheat, containing the fibers, and the germ, containing vitamins and minerals, are removed from the wheat grain

Kamut, being of an ancient nature, not selected, is not sieved and undergoes a single grinding process, leaving its nutritional content unchanged in this world.

From a technical point of view, Khorasan differs from other wheat varieties for the presence of double-sized seeds and for the ability to maintain most of their nutritional characteristics even after milling and processing. Finally, it contains more polyunsaturated fats than normal wheat, such as Omega 6, substances that make it a cereal with a

high energy value


KAMUT PASTE: NUTRITIONAL PROPERTIES

Kamut pasta is widely known for its high nutritional intake, a complete food that adapts to many types of diets.

It is a food rich in protein content, trace minerals, such as zinc, magnesium and selenium, and vitamins of group E, K, A and B.
