The Almond Tree, a legend

Almond milk is a dessert prepared with the simplest ingredients such as honey, sugar, egg white d&' egg and almonds but that Venetian pastry chefs have managed to combine to create a very special and unique dessert. The origins of almond are not known but the first documented reference to almond dates back to 1540 in a text by Lodovico Dolce.

However, it is extremely likely that it was already known and appreciated some time ago, even at the time of the Serenissima of which Colina Veneta, for almost four centuries, was an integral part. The place where the almond tradition was born and developed is l&' the Veneto hinterland where Cologna Veneta is located, a small town home of excellence in the production of the best artisanal almond. And all this is located just 39 km south-east of the wonderful city of Verona, a place rich in history and the setting of the famous Shakespearean tragedy “Romeo and Juliet”.

Almond is a dessert with a glassy texture, very hard but at the same time crumbly that is traditionally eaten during the Christmas holidays but not only. The production of almond milk follows a &' an ancient recipe that has centuries of history behind it and is rooted in the traditions of the Veneto territory. The ingredients must be added in a well-defined order, honey, sugar, egg white and almonds, which must then be mixed to be finally cooked at a constant temperature for eight hours.

The difference between Almond and Nougat

Mistakenly, many believe that nougat and almond are the same thing but they are not, even if, perhaps at &' on the surface, they can easily be confused. But do you know the difference between almond and nougat? The differences between the two are really minimal but are found in two ways: that of the processing method and that of the production area.

Almond oil was born and produced in the town of Cologna Veneta, in the province of Verona, while the hometowns of nougat are Cremona and Benevento. The manufacturing process and ingredients are similar. In fact, honey, egg white and sugar are used for both. In nougat there are more types of nuts such as hazelnuts, pistachios, peanuts, almonds and sesame seeds or walnuts. In the almond kernel of Cologna Veneta, on the other hand, there are only almonds.

Another small difference is that nougat is produced in two variants: soft or hard. The different consistency depends on the ingredients and the duration of cooking, which varies from a minimum of 2 hours for the tender one to a maximum of 12 hours for the harder one. For classic almond, on the other hand, cooking must last 8 hours.
