When we talk about Italian sparkling wines, we say Prosecco. Unfortunately, sometimes it is mentioned even when it has nothing to do with it. But this is the strength of that wine that has assimilated its name to Italian sparkling wine. In fact, however, there are many Italian sparkling wines, and to tell the truth, more and more. In most cases, they are very good! Many are also produced in the south, with increasingly better results.
But there is an area in Veneto where the grapes grow on incredible volcanic soil that offers grapes with high acidity, ideal for the production of sparkling wines with great freshness and character. It is the theater of Calvarina, the highest extinct volcano of the entire Italian Alpine foothills. On its slopes, columnar basalts emerge, and the surfaces are marked by black fossil lava, which we are accustomed to seeing on other still active volcanoes like Etna. The winemaking tradition of these lands is ancient, and the grapes that have always been cultivated are the Durella. A grape that the local winemakers and inhabitants once called cagnina, rabiosa, terms that warned of its strong acidity, with an important component of malic acid that enhances the tart perception of the grapes. Until about twenty years ago, it was a wine that was produced still and mainly sent to international markets, especially the German one, for the production of their sekt sparkling wines. The producers then decided to create their own sparkling wine, and for a few years, there have already been visionary pioneers. Among these were engineer Cecchin, sparkling wine producer Marcati, and a few others. Cecchin, in particular, focused on producing classic method sparkling wines, which still today offers great results. Over time, the production of Durello has grown and today represents a phenomenon that is increasingly on the rise.
