The history of Bacon has ancient origins that date back to the time of the Roman Empire when it was given to legionaries in slices every three days. In later periods it was also a form of payment, as in the Longobard period, when bricklayers at the start of seasonal work were paid with cuts of bacon.

A cold cut that looks a lot like bacon is the pillow and the two are often considered synonymous. In reality, they are very different. Bacon is obtained from the subcutaneous fatty tissue of the pig's abdomen and is sold in three different forms: stretched bacon, rolled bacon and smoked bacon. The pillow, on the other hand, is obtained from the cheek and part of the neck of a pig that is at least 9 months old. Its peculiarity consists in the fact that it is seasoned externally with salt and pepper and often also with garlic, sage and rosemary, with a maturation period of at least three months that allows the formation of a hard crust that characterizes it externally, while a very intense flavor matures inside. #39

Substantial differences, including organoleptic: 100 grams of bacon contain 458 calories, 45 fats, 0.66% carbohydrates, 11.6% protein and 40% water, while 100 grams of pillow contain 655 calories, 70% fat, 6.40% protein and 22% water.
