The Pancetta "Old" by Mendelspeck is a high-quality cured meat, made with boneless, cartilage-free pork, enriched with a skillful seasoning, brined, and slightly smoked. The processing involves traditional dry curing, which helps preserve the authentic flavors of this product.
The production of this cured meat takes place all year round in accordance with tradition. The first phase takes place in the factory in Termeno, where the meat is carefully selected based on weight and quality. Each piece is hand-massaged, ensuring a meticulous artisanal processing. After a light smoking, the pancetta is transferred to the Passo di San Lugano, at an altitude of about 1000 meters, where it is aged, giving the product its distinctive flavor.
After about two decades since the first speck was produced, production reached 800 pieces per week. Roberto's children, who had been by his side since childhood, were now young adults and had become an integral part of the company.
