To wake up the
wine after its resting period, do it without making too much noise! Many times you go to a restaurant and they serve you
sparkling wine by popping it open, but that is not the correct way and, even more so, it is not elegant. What’s worse is if the wine is particularly aged. Staying in the bottle for a long time means that a balance has been created that preserves the quality of all components and when it is brought back to light
it must not be done roughly. It especially should not be done with
sparkling wines even if it seems like a bit of an exaggeration.
As you know, sparkling wine usually has an internal pressure of about 6 atmospheres, which ensures a nice
perlage and a beautiful brightness in the glass. Well, if we pop it open noisily, an excess amount of CO2 escapes and thus loses some of its pressure. In fact, you may have happened to go to a prestigious restaurant and see the sommelier who
gentle guides the cork. It is not to avoid disturbing other customers at the tables but to
prevent ruining the wine that will enter your glass.
