Gianduia: your daily chocolate treat.

Every time someone says they don't love chocolate, a discussion always starts, as it is really hard to understand how one could not love it. Gianduia is a type of chocolate that accompanies us throughout our lives, both as children and as adults, and it also supports us in difficult times as our best friend forever. Let's discover together the long history of gianduia. 

 

Gianduia, a rather unusual story 

The chocolate paste known as gianduia or gianduja (or giandoja in Piedmontese) has a very long story. It originates from the Piedmontese pastry chefs who created an inexpensive spreadable cream made from spherical hazelnuts from the Langhe. The economic blockade ordered by Napoleon against British industrial products and its colonies had made the availability of cocoa very difficult. Because of this continental blockade, the gianduia paste would have been created by Michele Prochet in 1852.
However, there are some doubts about the birth of the cream, as the tombstone placed in Luserna San Giovanni states that Michele Prochet was born on March 23, 1839, and if the story of the creation of gianduia dates back to 1852, it would mean that at only 12 or 13 years old, Michele would have created his recipe! Not impossible, but certainly very unlikely. Moreover, during the economic blockade, the price of sugar, a fundamental ingredient for making gianduia, also increased. 

So we can say that gianduia was not invented solely due to the increase in cocoa prices imposed by Napoleon, and that the creator of the recipe is probably not Michele Prochet. 
However, the idea of this young boy was to mix roasted hazelnuts ground into a fine powder with cocoa. The chocolate/hazelnut mixture created was launched on the market during the Carnival of 1865, achieving astonishing success, linked also to the first individually wrapped chocolate, the "giaduiotto." 
Gianduia differs from gianduja because the latter word is the name of a popular Turin mask of Asti origin from the Commedia dell'Arte. 
Gianduja is the mask of Piedmont, typical of the carnival tradition. In fact, during the Carnival of 1865, the chocolates were distributed by the Gianduja mask. 

 

Gianduia cream, here's how to prepare it

Gianduia cream is available in every supermarket, provided by different manufacturers, but if you are a lover of homemade creams, we offer you a simple and delicious recipe.
You will need 40 grams of sugar, 20 grams of cocoa or melted chocolate, 50 grams of peeled hazelnuts, and 70 ml of milk. Start by blending the hazelnuts until you obtain a homogeneous and oily paste, then pour it into a large container with the milk, sugar, and cocoa. While mixing the ingredients, try to avoid creating lumps. Once the ingredients are mixed, pour the mixture into a glass jar and store it in the refrigerator. 
As you can see, gianduia cream is very simple to prepare and is an excellent ingredient for filling chocolate cakes, tarts, puff pastries, or brioches. 
There's no need to explain the taste of chocolate; it's exquisite and can be enjoyed on a slice of toasted bread or directly on its own. The gianduia cream can be made with variations; in fact, if you love the flavor of hazelnut, you can add some coarsely ground nuts directly into the mixture. 

 

Gianduia chocolate, impossible to resist

Gianduia chocolate contains, in addition to cocoa, 20-30% hazelnut paste and is available commercially as pure chocolate bars, both with the addition of whole hazelnuts like a kind of nougat, as well as gianduiotti chocolates or in the form of spreadable cream. Gianduia chocolate can be used in many recipes such as tasty chocolate cakes, plum cakes, muffins, or even spoon desserts based on gianduia. It has a very intense and pronounced flavor, and there are also flavored bars to satisfy all palates. 

 

Gianduia cake, an explosion of goodness

The gianduia cake is a true delicacy, quite simple to prepare and perfect for snacking, breakfast, or even as a very fancy dessert. This sweet is typical of the Piedmontese tradition, and once you taste it, you will fall in love with it. It is not just a simple chocolate cake because it is much softer and is covered with a layer of gianduia cream and hazelnut pralines, a true explosion of flavors.
