SENATORE CAPPELLI DURUM WHEAT: THE ORIGINS

Nazareno Strampelli began studying wheat at the beginning of the twentieth century to improve its quality and productivity; he focused his research on the crossing of seeds from all over the world, carrying out and describing the crossing of more than 800 grains, many of which using the original Rieti, cultivated always in the territory of Rieti, thus declaring its decline, instead paving the way for the success of his crosses.

In 1907, the Abruzzo deputy of the Kingdom d&' Italia Raffaele Cappelli, promoter in the early 20th century of the agrarian reform that then led to the distinction between hard and soft grains, allowed Strampelli to carry out experimental sowings on land near Foggia, in Puglia. As he had already done for soft wheat, Strampelli selected and crossed both durum grains native to southern Italy and the islands and from other Mediterranean countries.

The durum wheat that he was able to create in 1915, Senator Cappelli, was then released in 1923, giving it as its proper name the surname of Raffaele Cappelli, the deputy who in previous years had supported the research of Strampelli, who in the meantime became a Senator. Strampelli also created other varieties of durum wheat, but it was undoubtedly Senator Cappelli who was successful among Italian farmers, and this is because his productivity was much higher than that of the durum grains used up to that moment.

WHY CHOOSE SENATORE CAPPELLI MONOGRAIN PASTA

Despite being a very young variety of durum wheat, since it was created in 1915, Senator Cappelli is in effect an ancient grain. In fact, this was selected before modern industrial processes were introduced, that is, in that historical period of our country in the work was still largely artisanal.

Currently, unfortunately, the need to produce large quantities in a short time to meet the demands of large retailers has changed the way wheat is processed, favoring the spread of lower grains, containing more protein and more gluten. Senator Cappelli, on the other hand, has all the characteristics of the grains of the past, such as tall ears and deep roots, characteristics that make it the ideal variety for organic cultivation.

It is also important to say that this durum wheat, strictly Made in Italy, has better properties as well as more complete nutritional values. In fact, this type of pasta has a higher content of flavonoids and antioxidants, a real lifesaver for the &' body, and is even said to have the ability to lower cholesterol.

Not to mention the greater digestibility and the reduction of intestinal inflammation caused by gluten intolerances, thanks to a higher fiber content and a reduced gluten content. The sugar content is also lower than other varieties, while the presence of trace elements such as magnesium, potassium, calcium and zinc, B vitamins and vitamin E is important.

No less important is the fact that Senatore Cappelli single-grain pasta can be exclusively organic because, since pesticides tend to make the plant grow tall, a grain that already has a tall ear would only risk breaking; the fact of having deep roots naturally inhibits the presence of weeds, thus making l& #39 useless; the use of pesticides.

In fact, to produce this type of pasta, longer times and lower temperatures are needed, characteristics found only in artisanal production processes.
