The Senatore Cappelli durum wheat is named after the Abruzzo senator Raffaele Cappelli, who advocated for agrarian reforms in the early 1900s and for the revival of agriculture in Puglia. He supported the research of geneticist Nazareno Strampelli, providing him with experimental fields of his own. This is how, in the early 20th century, the Senatore Cappelli durum wheat was born, which is very adaptable and of high quality as it is cultivable only organically.

Raw, it recalls jute bags and the root of licorice. During cooking, it evokes freshly milked milk, chestnut peel and boiled potato. In the tasting, it has a soft and nervous texture, bringing to mind the sweet taste of bread crumb and a curiously salty finish.
