The pasta Il Valentino Felicetti is among the favorites of chefs who use the renowned Trentino pasta factory.
Produced with Senatore Cappelli wheat following organic practices, like the entire Monograno line.
Il Valentino, like all Monograno Senatore Cappelli, is the combination of Puglia and Trentino lands: the wheat that grows under the stones of Matera, the water and air of the Trentino Dolomites, where the Felicetti pasta factory operates.
This format is very special. Created in 2017, it bears the name of Valentino Felicetti. It is an unusual spaghetti with the largest dimensions ever produced: 2.4 mm in diameter. Made with bronze drawing, it requires 14 minutes for cooking.

The pasta Il Valentino from Pastificio Felicetti is a concentration of tremendous flavor and offers an exhilarating chewiness, enhanced by the meatiness of the Cappelli semolina compacted in a large size gauge.
Two suggestions: one of the recommended pairings is with a white fish ragù, so a fillet of white fish cut into pieces and warmed up in a sauté with garlic, celery, and carrots.
If I had to choose, I would dare a mussel sauce with tomato, obviously with a glass of dry white like a Grillo or a Greco di Tufo, or, if you prefer and it’s summer and you are in a little restaurant on the beach, a chilled sparkling wine.
Store in a cool and dry place.
If properly stored, the product does not change its shelf life even after the package has been opened.
