Cruschi peppers are a culinary gem originating from Senise, in Basilicata, and they are awarded the IGP mark since 1996.

 

Their history is rooted in the rich culinary tradition of this region, where artisanal production harmoniously blends with the cultural landscape.

How peppers become "cruschi"

These peppers, carefully cultivated since the spring sowing, reach their peak expression in the first days of August, when they are harvested.

 

The essence of this process merges with the peasant culture of Senise, where the peppers, carefully selected, are laid out on cloths and tied in long necklaces called "serte". 

 

This ancient practice, passed down from generation to generation, represents the heart of the artisanal production that gives cruschi peppers their distinctive character.

The IGP Senise pepper

The IGP Senise pepper, with its conical shape and sweet flavor, is the heart of this recipe.

The thin skin and almost non-existent pulp contribute to making these peppers suitable for drying, the next step in this process that gives them their irresistible crunchiness.

 

A quick "scottamento" in extra virgin olive oil is the key to transforming the peppers into a crunchy delicacy ready to enhance many dishes.

Uses of cruschi peppers
