The secret of the Avvolti lies in their processing: bronze drawing, a traditional technique that gives the pasta a porous and rough texture, perfect for capturing and holding every type of seasoning, enhancing the flavors with a sublime grip.
After drawing, the Avvolti undergo a slow drying process, which lasts for three whole days in wooden cells. This method, respectful of natural times, allows the pasta to mature slowly, preserving all the properties of the wheat and giving the final product superior quality.
