The pasta

The selection of pasta focuses on the unique quality of its two ingredients: water and semolina from durum wheat, both 100% Tuscan. The water comes from a private spring that flows directly from the Pistoia mountains, and the wheat stems from the passion and tradition of farmers in Maremma. From pure wheat with a high protein content, within a traceable supply chain from the field to the final consumer, our pasta is born. Made just like it was in the old days, in a workshop, where it is produced in the morning and left to dry for 3 days in wooden cells. No industrial process.
