We are very happy to finally host one of the most interesting cheese affinators at the national level: Giuseppe Bernardinelli, a simple man, full of passion and experience in the field of cheese affinements. His is a craft honed over time among the caves of his father Andreino, in the Valpolicella near Verona, where colorful molds adorned the masterpieces of alpine dairy farms and stables. 
 
A fascinating and timeless technique that distinguished many residents of the Veronese hills. An ancestral territory amidst vineyards, olive trees, and cypress trees that still today adorn the sweet landscapes of these places. A historic Valpolicella, climbing towards the first Prealps, the Little Dolomites, the Lessini Mountains. Ideal plateaus for the production of great milks for flavorful and creamy cheeses that are still obtained from those blooming pastures.

Giuseppe Bernardinelli is today sought after by illustrious chefs and gourmets all over Italy for the creativity of his masterpieces and for the delightful combinations he knows how to create. Cheeses that combine fruits, flowers, and aromatic herbs. A compendium of culture, history, and tradition that Giuseppe himself has traversed in his life and today translates into a slice of cheese or in a spiced cheese cream. 
 
Bruno Barbieri, famous chef and television personality, was one of his first ambassadors, and cult magazines like Gambero Rosso have praised his art and technique. Today the creations of Sapori del Portico, his brand, are all here at Spaghetti & Mandolino, making ours one of the most prestigious cheese selections online.
