Blue 61 300g

One of the most awarded blue cheeses: Blu 61! Cow's milk and aged in Raboso passito wine and red blueberries, simply one of our favorites.

Its paste is creamy, with widespread blue veins due to the blueing. It is peculiar for its elegance and harmony: an intense, bold flavor that is balanced by the typically sweet wine notes of Raboso passito.

The Awards Won

Blu 61 has been awarded the Gold Medal in the "blue cheeses" category at the Alma di Caseus 2012 competition, organized by the International School of Italian Cuisine led by Gualtiero Marchesi. In 2013, it was awarded by Slow Food and Onaff at the international event "Cheese" in Bra with a diploma of excellence in the "Infiniti Blu" competition held in Gorgonzola.

Milk, salt, lactic ferments, aging cultures, rennet. Dried cranberries (cranberries, sugar, sunflower oil) (min. 4%) and "Raboso Passito IGT" wine (1%) in the crust.

With 300 grams of cheese Blu 61 from Casearia Carpenedo you will fall in love: ideal simply placed on bread, è great to taste at the end of the meal for its uniqueness.

It is not wasted even for a special recipe: Risotto with Asparagus and Blu 61. Sweetness and savoriness in a dish that becomes a must for lunches with the "right" friends.

It pairs well with sweet wines from white grapes, including Recioto di Soave DOCG.

Tasting

Perfectly balanced in flavor and structure, rather sweet although blue-veined. The winey notes due to the presence of pomace pair perfectly with the notes of milk and the blue-veining. Simply a must-buy once a month!

Tasting notes

Perfettamente equilibrato nel sapore e nella struttura, piuttosto dolce sebbene erborinato. Le note vinose dovute alla presenza delle vinacce si sposano perfettamente con i sentori di latte e con l’erborinatura. Semplicemente da acquistare una volta al mese!

Si abbina con vini passiti da uve bianche e tra questi Recioto di Soave DOCG.
