CAO Formaggi, acronym for Cooperativa Allevatori Ovini, is a Cooperative Society made up of 700 members, founded in Sardinia and more specifically in Fenosu, in the province of Oristano, over 50 years ago, in 1966. The cooperative was established with the purpose of bringing together a group of breeders to transform the milk produced in their respective farms into dairy products that stand out for their deliciousness and high quality standards. The union of breeders is also aimed at enhancing and recognizing the work and the characteristic pastoral heritage of the territory.

The passion put into daily work and the constant commitment to quality research, in line with the principles of Sardinian dairy tradition, are the values shared by all breeder members, who throughout history have contributed to creating and carrying on the cooperative to the reality that today represents CAO Formaggi. The Cooperative currently distributes its products at a local, national, and also international level. CAO Formaggi is an important reality that not only exports cheese but also the dairy culture and traditions of the Sardinian territory.

The cooperative produces under the CAO Formaggi brand a large variety of pecorini differing in taste and aging: DOP Pecorini, soft cheese, semi-aged, and long-aged cheese, as well as derivatives such as ricotta, melted cheeses, and grated cheese. The entire production is the exclusive result of the transformation of sheep's milk.
 

The quality of CAO Formaggi products

The cooperative currently boasts high quality standards thanks to controls, implemented production methods, and the raw materials used, which come exclusively from local farms. CAO Formaggi has set its policy on traceability, starting from the control of the quality of the milk and therefore, from the quality of the farms providing it; the CAO farms are all subject to strict controls to ensure hygiene and quality of the milk. 

CAO Formaggi has managed to conquer the local, national, and foreign markets thanks to the responsibility and commitment taken towards the consumer. Alongside the maintenance of traditional practices and the guarantee of certified quality of the raw materials, CAO Formaggi continuously invests in research projects, periodically updating the production methods and the technologies used, with a view towards continuous improvement.

The entire milk cycle is carefully monitored at each stage. In CAO's internal laboratory, work is done at full speed to monitor and verify with daily analyses and controls the parameters in all phases of the processing process, in order to always guarantee high quality levels on every product.
 

The value of Sardinian dairy tradition

The pastoral heritage, an expression of the history and culture of the Sardinian territory, is a fundamental value for the cooperative; for this reason, the application of the most advanced technology has never aimed to replace tradition. CAO Formaggi has always sought to combine research and technology with that base of fundamental knowledge and processing techniques that characterize its products and are rooted in the oldest Sardinian dairy tradition. And it is precisely the ability to combine the dictates of tradition with a cutting-edge facility that constitutes the strength of CAO Formaggi.
