The Interdonato Lemon, on the other hand, grows in the volcanic black soil north of Taormina in the province of Messina: its peel is famous for its olfactory purity and the unique aromas it can express. Modica Chocolate is distinguished from other types of chocolate because it does not undergo conching. This process is what allows chocolate to be particularly melting and soluble on the palate. Modica Chocolate, on the other hand, maintains its graininess and is not shiny at all. The taste is that of ancient primordial chocolate: Sabadì reveals it to us in its naturalness and ancient elegance.
The chocolate used to make this bar is an Ecuadorian Slow Food Presidio, a fair trade product, with a minimum cocoa content of 60%. The Interdonato Lemon is also a Slow Food Presidio.
