The Visciolata from Podere Casella Muzighin is truly extraordinary! Also known as Visciole al Sole, the visciolata is prepared using visciole in the simplest and most natural form.
The visciole are a variety of wild sour cherry that is very ancient and has been growing spontaneously in the area since ancient times. They are characterized by an intensely rich flavor, not too sweet, with an intriguing almond-like aftertaste that creates a lovely fresh and tart sensation.
In this traditional preparation, the whole ripe fruits (still with the pit), which are healthier and larger, are jarred by adding granulated sugar to fill all the spaces left empty.
The jar is hermetically sealed with a screw cap and is then placed in a sunny spot for 30-40 days until the sugar is completely dissolved. In this way, the fruit confits but does not ferment and can therefore be consumed even by children. Try them: they are delicious!
The Visciolata from Podere Casella Muzighin is perfect for enriching a healthy fruit salad but also for garnishing ice creams, granitas, and various desserts.
However, the visciolata is also delicious when consumed on its own, at which point one can appreciate the very particular and characteristic flavor of the fruit.
