The Organic Extra Virgin Olive Oil Frantoio del Borgo Calabria IGT by Azienda Agricola Francesca De Leo Alberti is a medium fruity oil characterized by fresh grass and olive leaf aromas. On the nose, it has a green sensation, with hints of artichoke stem and chicory. The taste presents a moderate to high intensity of pungency and bitterness. It is characterized by a flavor of green walnut and bitter almond. Fluid and balanced.

Harvest Method: Mechanical with shakers.
Pressing: Within a few (1-2) hours after the end of the daily harvesting, the olives are brought to the mill and processed. The olives are washed in running water before being passed into a crusher equipped with perforated grids, to avoid any oxidative heating phenomena during this phase. The subsequent kneading of the paste occurs in closed stainless steel tanks (without water), regularly cleaned between each processing, for no longer than thirty minutes and at a temperature not exceeding 21°C. This is followed by the final extraction process using state-of-the-art centrifuges that separate the oil from the oily must.
