The Artisan Cotechino Crudo, the flagship product of Macelleria Fratton which has remained unchanged through all four generations, is almost completely free of nitrites and nitrates, a choice that combines the protection of the health of the end consumer and compliance with European regulations.

According to the European Directive 95/2/CE of 1995, products based on meat that are not subjected to thermal treatment, such as sausages which are made from raw meat, are required by law to add a minimal percentage of these substances that act as “reserve preservatives” to prevent the development of pathogenic microorganisms that are very dangerous to health, thus posing a potential risk of botulism poisoning.

So when you find a product of this type labeled “Absence of artificial preservatives,” be aware that a minimal amount is still present within the product, legally at levels far below the regulatory maximums, or that a natural preservative has been used which should be listed among those approved by the EU. Why this specification? Because a transparent label is the first step towards a relationship of complete trust with the customer, as advocated by the philosophy of Macelleria Fratton.

In Veneto, it is traditional to serve it with pearà, a sauce made from bread, pepper (the word "pearà" in the Venetian dialect actually means "peppered"), meat broth, and marrow, perhaps alongside other boiled meats, usually lesso, which is boiled beef, and tongue.

We also recommend pairing it with an excellent mostarda in the Mantuan or Cremonese style, maybe with a good glass of Lambrusco to enhance its round flavor and spiciness.
