How the Sibona distillery was born
The history of how the distillery came to be (which has over a hundred years of life) is likewise remarkable: it all started with an old steam locomotive used for distillation, which was later replaced by copper stills.
How the Sibona distillery works
The pomace is distilled fresh, which allows for the extraction of the scents and aromas of the harvest. For the creation of grappas and spirits, the best pomace from the area is used, and investments have also been made in human capital with the hiring of three oenologists who have been engaged in the sector for several years.
Grappas reach their highly distinctive and noble characteristics thanks to careful distillation, the elimination of heads and tails, and finally, a long aging period in tonneau and barriques that enhance aromas and complexity.
