Widespread cultivation and maximum attention to quality
Although SUNNN's olive trees are scattered in mountainous and hilly areas, attentive spectators of partly barren landscapes rich in charm and ancestral atmospheres, the processing of our cultivars is entrusted to mills that guarantee crushing within 4/6/8/12 hours at most.
This ensures a product of the highest quality, as excellence requires crushing within 24 hours since, as soon as the olive is harvested, the oxidation process begins immediately. The timeliness of the mill in slowing down this process and the processing in a clean environment (extra virgin olive oil absorbs, like a sponge, any odors present in the surrounding environment) with constant cleaning of the machinery allows maintaining the typical qualities of each cultivar, thus ensuring a product of true Italian excellence. Moreover, storage occurs in temperature-controlled tanks that determine the stability of the product's quality.

The territory of Sannio is characterized by numerous microclimates ideal for olive cultivation, promoting the growth, within just a few kilometers, of just as many cultivars (within the borders of the Sannio territory, there are over 34) with characteristics, aromas, scents, and properties that are absolutely unique and different from each other.
