The Nascondino Affinato in Pere by Corrado Benedetti (offered here in a 1/4 size of 2.5 Kg) is a cheese with a straw-yellow color and a slightly spicy taste with fruity notes.

This cheese has its roots in history. Once upon a time, to protect the cheese from theft, the wheels were hidden under fruit or in hay. In these hiding places, the cheeses took on unexpected aromas and flavors. Experience has transformed this necessity into a technique that Corrado Benedetti has perfected. The cheese wheels are cleaned and, in this version, immersed in a puree made from macerated pears in which they are left to rest. They are then removed from the vats and placed to age. Thanks to this process, the pears impart delicacy and an amiable character to the semi-fat cheese.
