Podere Cariano is located in the southern part of Valpolicella at the foot of the first hills. In the municipality of San Piero in Cariano, the soils are more clayey and maintain the characteristic limestone component typical of the lands of Classic Valpolicella. A terroir and climate situation that differs from the cru Le Marognole and expresses Amaroni that are more straightforward and substantial.
An Amarone that still maintains the production philosophy that distinguishes Marco Venturini. Pure, essential, and above all elegant in its freshness and clarity. The grapes were harvested in October and underwent a drying process of about 60 - 90 days. Then pressed, and the must was fermented for 30 - 40 days at 15°C. Aged in casks and barriques for a period of 3 years and then left in the bottle for another year.
Classic blend of historic Valpolicella.
Amarone characterized by a beautiful freshness and sapidity, with a distinct crunchy cherry and other red fruits like blackberry and blueberry. The spice of black pepper is noticeable and blends with a pleasant sweet sensation of juniper. Balsamic with menthol and licorice mixed with bitter cocoa and vanilla. Dried fruit leaves a pleasant sensation on the aftertaste at the end of swallowing. Clean, fresh, and savory palate with a dry and enveloping tannin. Persistent finish.
Pairings. With very aged cheeses, we recommend Monte Veronese Vecchio or Stravecchio di Malga DOP. Excellent also with other aged cow's cheeses like Vezzena Stravecchio DOP and Bitto storico DOP. It pairs well with Chianina IGP steak, sauces of Chianina IGP like nero. Great with game meat and with boiled beef accompanied by the typical pearà veronese.
