The Redivino Extra is undoubtedly one of the flagship cheeses of Corrado Benedetti.
The caciotte selected by Corrado Benedetti, created by trusted dairymen, meet the king of wines from Valpolicella, giving life to a special niche product. This author’s creation concentrates the best from the pastures of Lessinia and finds in Amarone an ideal aging for a rich cheese with a refined and elegant flavor.
An exciting cheese made from cow's milk and aged for at least 12 months, with a semi-hard consistency. On the palate, it offers intense buttery and winey notes, but overall it is very delicate.
Ingredients: cow's milk, rennet, salt, lactic ferments. Aged in "Amarone della Valpolicella DOCG" wine.
Inedible rind.

The Redivino Extra aged in Amarone della Valpolicella DOCG (which we present here in a half form of about 1kg) is very well suited to being tasted on its own at the end of a meal, accompanied, of course, by a great Amarone DOCG. A Valpolicella DOC will also work well.
It pairs excellently with chestnut honey and dandelion honey along with dessert wines and recioti made from red grapes. It is also worth trying in some recipes for risottos, such as that with Redivino and pink radicchio from Verona.
