The Redivino Extra is undoubtedly one of the flagship cheeses of Corrado Benedetti.
The caciotte selected by Corrado Benedetti, created by trusted cheesemakers, meet the king of wines from Valpolicella, giving rise to a special niche product. This unique creation concentrates the best of the pastures of Lessinia and finds in Amarone an ideal aging for a strong cheese with a refined and elegant flavor.
An exciting cheese made with cow's milk and aged for at least 12 months, with a semi-hard texture. On the palate, it offers intense buttery and winey notes, but overall it's very delicate.
Ingredients: cow's milk, rennet, salt, lactic ferments. Aged in "Amarone della Valpolicella DOCG" wine.
Inedible rind.

The Redivino Extra aged in Amarone della Valpolicella DOCG (which we present on this page in a whole form of about 2kg) is very suitable to be tasted pure at the end of a meal accompanied, of course, by a great Amarone DOCG. A Valpolicella DOC can also work well.
It pairs very well with chestnut honeys and dandelion honeys alongside dessert wines and recioti made from red grapes. It’s also worth trying in some recipes for risottos, such as the one with Redivino and pink radicchio from Verona.
