The Baldus de La Casara is a semi-cooked cheese, produced exclusively with pasteurized cow's milk.
The Baldus is dry-salted or brined, and has a maturation of about two months. It has a cylindrical shape with slightly convex edges and almost flat faces. The rind is thin, and the paste is straw yellow in color. It has an elastic and soft texture with pronounced holes, with a milky taste and a sweet and intense flavor.

The Baldus de La Casara (which we present to you here in a whole form of about 2 kg) is an excellent cheese for quality platters, for main courses paired with yellow corn polenta.
It pairs well with medium-bodied white wines and sparkling wines made using the classic method. It also goes well with spicy red wines and international blends.
