The Baldus Cheese from La Casara is a semi-cooked cheese made exclusively from pasteurized cow's milk.
Baldus is dry-salted or brined, and has a minimum aging period of two months. It has a cylindrical shape with a slightly convex edge and almost flat faces. The rind is thin, and the paste is straw yellow in color. It has an elastic and soft texture with pronounced holes, offering a milky flavor with a sweet and intense taste.
