The Truffle Salami from Quadro Carni e Salumi is a high-quality cured meat that brings with it the aromas and flavors of the Piedmontese territory. The truffle sensation is enveloping, and once you catch a whiff of it, the desire is to slice it to enjoy even more of the aroma of the black truffle with which it is aged.
Characteristics: raw pork salami made from a balanced percentage of high-quality fatty and lean meats. For the production of the raw salami, Quadro Carni uses only the selected trimmings from the pig. The meat is ground with the addition of pancetta, jowls, spices, and black truffle. It is then stuffed into natural casings, tied by hand, and aged for about 40 days.
Ingredients: Pork meat, pork fat, salt, preparation based on summer truffles (minced summer truffles Tuber aestivum Vitt, summer truffle juice Tuber aestivum Vitt, salt – percentage of summer truffle in the finished product: 2.5%), sugars: dextrose, sucrose, natural flavors, spices. Antioxidant: sodium ascorbate E301, potassium nitrate E252.

Storage instructions: store in a cool place, temperature 15-18°C. Once cut into slices, it should be kept in the fridge at 4°C.

It is the special ingredient for a tasting of vintage red wines because one bite invites a sip and vice versa. To accompany it, just a breadstick or some durum wheat bread will suffice.
Another interesting pairing is with the classic fried egg in a frying pan. You just need to slice 6-8 very thin slices of black truffle salami, cook 3 eggs in a frying pan, and cover them with the salami in the last 3 minutes of cooking.
