Pisa is the city from which the tradition of Cantuccio originates, even though in the beginning it was a cookie that had the same shape we know today but did not contain almonds. The Accademia della Crusca in 1691 defines it as: "a sliced cookie made of fine flour with sugar and egg white". During the time of Catherine de' Medici in the 16th century, there were similar ones called biscottelli that contained almonds but did not have this composition and shape. The Cantuccio as we know it today was then certified in Prato in the 18th century, and initially, they were called alla genovese. The name recalls the meaning of little piece, corner, portion. In Latin, it was cantellus or piece of bread, canto or corner in Tuscan. Today, the Pasticceria di Romito takes that ancient recipe and offers an evolution with high-quality dark chocolate. For greedy palates!
The cantucci di Pontedera by Nonna Nina are made entirely by hand and you can see it from the fact that they all have different shapes from one another. Moreover, their sizes are the authentic and typical ones from the ancient recipe. The craftsmanship is also perceived from a fragrance of ancient pastry that takes you back in time. The aroma is very elegant and engaging. The dark chocolate is pure South American criollo. Italian hazelnuts from Piedmont are also added. And as in the typical recipe, the pastry chefs add rosolio, an ancient liqueur made with rose petals. They are ideal for sweet dessert wines, with Vin Santo Toscano first of all, but also Recioto di Soave DOCG or anyway always passito from white grapes.
