The Mantuanella is the "innovative" cheese from the Levante agricultural company. It is a cheese that is supplemented during the pre-fermentation phase with lactic ferments and natural enzymes (all produced by the company itself) that serve to predigest lactose, thus being "lactose-free". This technique also allows cheese aged less than 30 months to be eaten by lactose intolerant individuals.

The Mantuanella cheese has a well-formed, compact texture with a moderate presence of tyrosine granulations.
Especially creamy with a more pronounced soft perception and a particular sweetness. It is an excellent cheese for appetizers or for a full meal, to be paired with delicate peach or apricot jams and acacia honey.
Pairing: a sparkling wine from Valdobbiadene Prosecco DOCG.
