Cimbro cheese aged with beer 300g

The Cimbri are a Germanic people who arrived from Bavaria around 1300 in Verona. Mostly shepherds and farmers, woodcutters, and simple sheep herders.

At that time, Verona was governed by the Scaligers, large owners of Brogne sheep that produced fine wool. They asked Cangrande della Scala for help, and he was offered the opportunity to govern the herds in the uninhabited Lessini mountains, also overseeing the territory.

Even today, one can distinguish the stone huts built with the ancient Bavarian interlocking technique. With them, the activity of cheese production was also born, which has remained in the tradition of preparing Monte Veronese DOP. 

Using the two-mountain technique, this cheese aged for 6 months is also produced which is allowed to mature in beer and later covered with what remains after the fermentation of grains.

Questo é un formaggio nostrano prodotto con latte vaccino. Raggiunta la stagionatura di 2/3 mesi, la forma viene affinata avvolta nella trebbia della birra. Al termine di questo passaggio viene confezionato sottovuoto dove completa l’affinamento per un periodo variabile di minimo un mese. In crosta prende il colore giallo paglierino intenso della birra.

Cimbro cheese aged with beer 300g: use in the kitchen

The cheese has been in contact with the beer and therefore has absorbed all its precious creaminess and flavor.

By osmosis, the beer has gravitationally entered the cheese, and since it is a blonde beer, it has slightly gilded the paste. Moreover, it has made it very creamy and flavorful.

Hints of hops and honey derived from the grains that fermented in it. In the end, the cheese has been covered with the still wet residue after fermentation. 

Enjoy it with sweet crunchy snacks that are particularly pleasant and tempting. Therefore, all the cheese is edible. 

Excellent to pair with a nice weizen beer for harmonious aromas and with a sparkling rosé.

Tasting notes

Sentori di luppolo e di miele derivanti dai cereali che vi hanno fermentato. Alla fine il formaggio è stato coperto con il residuo (trebbia) ancora bagnato dopo fermentazione.
Ha un gusto deciso ed intenso, é profumato ed aromatico.
