The Casara is located at the foot of the Lessini Mountains among the highest hills of the denomination of Durello DOC and Soave DOC. White grapes for white wines. The first is produced with Durella grapes which were once called rabiosa or cagnina precisely for their acidity. The Garganega for Soave, on the other hand, is a native grape typical of the Veronese region, the most well-known and cultivated.
With the two wines and their pomace, it is used to refine cow's milk cheese produced with the same technique as Monte Veronese DOP. It has a aging period of 8 to 19 months. The maturation in the pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.
