The Casara is located at the foot of the Lessini Mountains among the highest hills of the designation Durello DOC and Soave DOC. White grapes for white wines. The first is produced with Durella grapes, which were once called rabiosa or cagnina due to their acidity.
The Garganega for Soave is instead a native grape typical of the Verona area, the most known and the most cultivated. With the two wines and their pomace, it matures the cow’s milk cheese produced using the same technique as Monte Veronese DOP.
It ages from 8 to 19 months. The resting in the pomace and in the wines implies an absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.

It is a cheese that smells of flowers and must. A beautiful creaminess, especially in the center where the paste literally melts in your mouth. Even near the crust, the paste is particularly creamy with a nice balance of acidity and sweetness.
Aroma of fine herbs. A hint of hazelnut as well. A very good cheese to end a meal or to pair with platters of other aromatic or cured cheeses.
For white wines, also aromatic ones from the Atoatesini region, or for Soave or Spumante Durello precisely due to the resonance of the products.
