Goat blue full form 3 kg

The Blu di Capra from Casara is made with fine goat milk from Lessinia. A goat cheese to which, in order to become blue-veined, Penicillium Roqueforti mycelium is added, which will create the typical blueing phenomenon.

The cheese is aged for about 60-90 days during which the texture becomes creamy and pleasantly sweet and tangy, with a nice aromatic quality.

The whole 3kg Blu di Capra is ideal for large events. It is spectacular to taste on a slice of yellow or taragna polenta from Valtellina or paired with various jams, mustards, and honeys. It is interesting on risottos. It pairs well with mellow wines with a sweet finish, such as a Passito or a Recioto di Soave DOCG.

It is the perfect synthesis of a delicate flavor, born from a sought-after balance between the characteristic taste of goat's milk and the fragrant note of the blue mold, and important nutritional characteristics: high digestibility, low cholesterol content, and an excellent source of protein and calcium. With a compact paste of ivory white color, Blu di Capra features typical gray-green veins, resulting from the maturation of natural molds during aging. The taste is extremely harmonious and satisfies even the most demanding palates.

È la sintesi perfetta tra un sapore delicato, frutto di un ricercato equilibrio tra il caratteristico sapore di latte caprino e la nota profumata dell’erborinatura, e caratteristiche nutrizionali importanti: alta digeribilità, basso contenuto di colesterolo, ottima fonte di proteine e calcio. Di pasta compatta, di color bianco avorio, il Blu di Capra presenta le tipiche venature grigio-verdi, frutto della maturazione, durante la stagionatura, di muffe naturali. Il gusto risulta estremamente armonico e soddisfa anche i palati più esigenti.
