Goat Blue 300g

The Blu di Capra from Casara is made with fine milk from Lessinia goats. A goat cheese to which, in order to become blue-veined, some Penicillium Roqueforti mycelium is added, which will create the typical blueing phenomenon.

The cheese is aged for about 90 days, during which the mass becomes creamy and pleasantly sweet and tangy, with a nice aroma.

Goat Blue 300g: use in the kitchen

The Blu di Capra is spectacular to taste on a tile of yellow or taragna polenta from Valtellina or paired with various jams, mustards, and honeys. Interesting on risottos. It pairs well with smooth wines that have a sweet finish, such as a Passito or a Recioto della Valpolicella.


Tasting


It is the perfect synthesis of a delicate flavor, the result of a sought-after balance between the characteristic taste of goat's milk and the fragrant note of aging, and important nutritional characteristics: high digestibility, low cholesterol content, and an excellent source of protein and calcium. With a compact paste, ivory-white in color, Blu di Capra features typical gray-green veins, the result of natural mold maturation during aging. The taste is extremely harmonious and satisfies even the most demanding palates.

È la sintesi perfetta tra un sapore delicato, frutto di un ricercato equilibrio tra il caratteristico sapore di latte caprino e la nota profumata dell’erborinatura, e caratteristiche nutrizionali importanti: alta digeribilità, basso contenuto di colesterolo, ottima fonte di proteine e calcio. Di pasta compatta, di color bianco avorio, il Blu di Capra presenta le tipiche venature grigio-verdi, frutto della maturazione, durante la stagionatura, di muffe naturali. Il gusto risulta estremamente armonico e soddisfa anche i palati più esigenti.
