The Crudo Alpino comes from a piece of loin that is aged and smoked in stone caves in the mountains with typical high-altitude aromatic herbs such as arnica, juniper berries, motherwort, and other rarities found especially in the Lessini Mountains, which are so rich in flowers.
The loin is tied while still fresh and coated with spices and herbs. It is then left to smoke naturally from the slow burning of branches and juniper berries.
The aging process will last for 5 months. At the end, after partial trimming, it is vacuum packed.
The meat of this cured meat is particularly flavorful and has the scent of herbs and remarkably balsamic and fresh aromas.
A sensation of softness, especially in the center, and a certain overall sweetness. Savory and spicy with great balance.
Hints of sage and rosemary. Pleasant as a sliced meat to put in long-leavened bread. As a charcuterie board.
