The Morlacco is a typical cheese from the Veneto region, particularly from the pastures of Monte Grappa.
This peak became famous for the heroic events of the Great War; since the time of the Republic of Serenissima, it had witnessed the settlement of Balkan peoples, shepherds, and woodcutters, who here began to produce a simple cheese named after their region of origin: Morlachia.
It is a cheese made from raw semi-skimmed cow's milk and a rennet coagulation. This is why its aroma is so intense, and its texture is particularly elastic with a consistent eye.
