The Morlacco is a typical cheese from Veneto, particularly from the pastures of Monte Grappa.
This peak became famous for the heroic events of the Great War. Since the time of the Republic of Serenissima, it had seen the settlement of Balkan peoples, shepherds, and lumberjacks, who began to produce a simple cheese here, named after the region from which they came: Morlachia.
It is a cheese made from raw semi-skimmed cow's milk and enzyme curdling. For this reason, its aroma is so intense, and its consistency is particularly elastic with a dense texture.
