The spicy Gorgonzola from Palzola is one of the most significant products of the company and among the most sought after by cheese enthusiasts and lovers.
The shape is aged for 70 days and during this period, the marbling gently expands across the entire surface of the compact cheese.
More pronounced towards the center with a fairly dark green color typical of it.
It remains very creamy, in the pure style of the Paltrinieri family.
The Palzola piccante is a must in the landscape of Italian blue cheeses and features a compact paste with a particularly dark and well-distributed blue veining throughout. It has an exquisite spiciness but maintains a particular and elegant creaminess and an initial sweetness that ends with a very intriguing dry fruit sensation. Excellent when melted on a nice warm and soft yellow polenta in the pure style of northern Italy, for filling Gorgonzola and walnut ravioli, to pair with dried fruits and dried figs for tasty appetizers. Also ideal with a drop of wildflower honey. To enjoy it with a wine, soft and generally sweet wines are recommended, such as Passito from white grapes and Recioto di Soave DOCG.
