The Summer Wind has a name that is all a program... in fact, it is a cheese that speaks of the sun and the wind but also of the freshness of flowering meadows near the Dolomites and the hands of farmers who manually cut the fallow land to produce fragrant and aromatic hay.
This is a cheese produced only during the summer months in the Dolomitic pastures and later aged in blooming and fragrant spring hay. During this period, the cheese acquires creaminess but especially very intriguing hay aromas.

The Summer Wind is a cheese with a beautiful texture and compactness, but also a certain softness due to the aging in fresh spring hay rich in flowers and aromatic herbs from the alpine meadows. The aromas of hay can be perceived very distinctly and enhance the pleasantness of the milky and buttery notes of the cheese.
Excellent for a quality platter, to be paired with noble Italian cured meats and pear jams or delicate mustards made from apples. It also pairs very well with acacia or chestnut honey and full-bodied white wines with good aromaticity, such as Muller Thurgau and Gewurtztraminer.
