This is a cheese produced only in the summer months in the Dolomite pastures and subsequently matured in fragrant and flowering spring hay. During this period, the cheese acquires softness but above all very intriguing hay aromas.

The Summer Wind is a cheese with a nice consistency and compactness but also a certain softness due to the aging in fresh spring hay rich in flowers and aromatic herbs from the alpine meadows. The aromas of hay can indeed be perceived very distinctly and enhance the pleasantness of the milky and buttery notes of the cheese.
Excellent for a quality cheese board, to be paired with noble Italian cured meats and pear jams or delicate mustards made from apples. Moreover, it goes very well with acacia or chestnut honey and with full-bodied white wines with good aromaticity such as Muller Thurgau and Gewurtztraminer.
