The Summer Wind has a name that is truly a program... in fact, it is a cheese that speaks of the sun and the wind, but also of the freshness of flowered meadows in the Dolomites and of the hands of farmers who cut the fallow by hand to produce fragrant hay.
It is a cheese produced only during the summer months in the Dolomite pastures and subsequently aged in spring flowered and fragrant hay.
During this time, the cheese acquires creaminess but especially intriguing hay aromas.

The Summer Wind is a cheese with a nice consistency and compactness, but it also has a certain softness due to the maturing in fresh spring hay rich in flowers and aromatic herbs from the alpine meadows.
The scents of hay can be perceived very distinctly and enhance the pleasantness of the milky and buttery hints of the cheese. Excellent for a quality cheese board, to be paired with noble Italian cured meats and pear jams or delicate mustards made from apples.
Moreover, it pairs very well with acacia or chestnut honey and with full-bodied white wines with good aromaticity such as Muller Thurgau and Gewurtztraminer.
