The production technique using the Charmat method is the one normally used for obtaining Prosecco Superiore wine.
In this case, the alcoholic component is not very pronounced and remains at values of 11-12%Vol. The amount of sugar is equal to 15g/l.
An Extra Dry that stays true to the traditional values of these hills.
The denomination Asolo is part of the area with the highest quality, along with Valdobbiadene and Conegliano. The Glera from these territories is indeed used to produce Prosecco of the Superiore and DOCG types. The Giusti company owns seven vineyards on the slopes of Montello in the municipality of Asolo at an altitude of about 250 meters. Their names are: Maria Vittoria, Aria Valentina, Abazia, Amelia, Emily, Ava, and Sienna. These are generally rich soils with clay and limestone in depth.
This Prosecco Superiore is the Extra Dry version with a beautiful balance between the softness of crispy yellow fruit and the freshness of a nice citrus component.
The fruity component of this Prosecco Superiore is very interesting with yellow-fleshed fruits such as golden apple, apricot, peach, and yellow citrus fruits like lemon, along with a pleasant bergamot sensation. The bubbles are creamy and enveloping with a nice acidity and savoriness.
This is a versatile Prosecco for pairing with fish and shellfish, particularly with Sicilian red prawns and shrimp. It is pleasant with fresh goat's milk cheeses, as well as creamy cow's milk cheeses typical of Treviso production, such as Casatella Trevigiana DOP. It pairs well with smoked cold cuts from the South Tyrol tradition and slightly smoked cured meats from Friuli, such as Sauris or Cormons.
